Ingredients
1 serving
- Chicken breast, thinly sliced105 g cooked (about 140 g raw)
- Rice noodles, cooked190 g cooked (about 55 g dry)
- Konjac (shirataki) noodles225 g drained (about 1 pack)
- Toasted sesame oil3 g (about 3/4 tsp)
- Cabbage, shredded100 g (about 1 1/2 cups)
- Carrot, cut into thin matchsticks25 g (about 1/4 carrot)
- Bell pepper, thin strips35 g (about 1/4 pepper)
- Green onion, sliced12 g (1 to 2 stalks)
- Soy sauce, low-sugar Worcestershire or yakisoba sauce, oyster sauce, rice vinegar, ginger, garlic, pickled ginger, sesame seedsto taste
Method
- Slice the chicken into thin strips and season with salt, pepper and a little grated ginger. Let it sit for 10 minutes.
- Rinse the konjac noodles well under cold water. Dry-toast them in a hot non-stick pan for 3 to 4 minutes, tossing, until they squeak and the water is gone. Set aside.
- Soak the rice noodles in just-boiled water for 3 to 4 minutes, or as the package says. Drain and toss with a few drops of the sesame oil so they do not clump.
- Whisk the sauce: 1 tbsp soy sauce, 1 tbsp low-sugar Worcestershire or yakisoba sauce, 1 tsp oyster sauce, 1 tsp rice vinegar, 1/4 tsp grated ginger and 1 minced garlic clove.
- Sear the chicken in a hot, dry non-stick pan for 4 to 5 minutes, until it reaches 74°C (165°F) inside. Push it to one side.
- Add the rest of the sesame oil, then the cabbage, carrot and pepper. Stir-fry over high heat for 3 to 4 minutes so they stay crisp-tender.
- Add both noodles and the sauce and toss for 1 to 2 minutes until glossy. Plate and finish with green onion, plus pickled ginger and sesame seeds if you like.
Tips
- Do not skip the dry-toast. Wet konjac noodles leak water into the pan and the sauce slides off.
- Keep the heat high and the pan uncrowded. Too much in the pan steams the cabbage instead of searing it.
- Shrimp or thinly sliced pork loin work at the same cooked weight.
