Ingredients
1 serving
- Low-carb high-fibre tortilla1 large (39 g)
- Tomato sauce, no added sugar30 g (2 tbsp)
- Cottage cheese 1%, whipped215 g (just under 1 cup)
- Light mozzarella, shredded27 g (about 1/4 cup)
- Parmesan, grated5 g (about 1 tbsp)
- Tomato, very thinly sliced50 g (about 1/2 small tomato)
- Oregano, garlic powder, chili flakes, fresh basil, salt and pepperto taste
Method
- Heat the oven to 200 to 220°C (400 to 425°F). Toast the tortilla in a dry non-stick pan over high heat, flipping every minute, for 3 to 4 minutes, until it is hard like a cracker.
- Whip the cottage cheese with a fork, or blend it for 10 seconds, with a pinch of garlic powder and oregano.
- Spread the tomato sauce over the tortilla, leaving a 1 cm border, then spread the cottage cheese over it as a white layer.
- Pat the tomato slices dry and lay them on top, then scatter the mozzarella and parmesan.
- Bake for 5 to 7 minutes, until the cheese melts and the edges brown. In an air fryer, 180°C (350°F) for 4 to 5 minutes.
- Finish with chopped fresh basil, chili flakes and black pepper.
Tips
- A cracker-hard crust is what stops the pizza going soggy. Do not rush the toasting.
- Basil goes on after the oven. Baked basil turns black and bitter.
- Freezer batch: assemble several on toasted tortillas, freeze flat on parchment, then bag them. Bake from frozen at 200°C (400°F) for 10 to 12 minutes.
